Welcome to Dry Lakes Ranch
Hello, friends! We’re Reyes and Kacie Carballo, a husband-and-wife team blessed to farm, ranch, and raise some mighty fine beef right here in beautiful Parowan, Utah.
We operate Dry Lakes Ranch, formerly known as Mitchell Herefords, carrying on a ranching heritage that dates all the way back to 1873. Today, we raise cattle across roughly 9,000 acres of high-mountain and valley pastureland and farm nearly 380 acres of crops that help feed the cattle we care for.
Our goal is simple: to raise exceptional, local beef and put truly good food on your family’s table.
Our cattle graze native grasses and forages and are finished with nutrient-rich crops grown right here on our own farm. We believe the land, the feed, the care of the animal, and generations of ranching know-how all make a difference. We might even have a few secrets when it comes to growing extraordinary beef—and we have a feeling you’ll become a believer once you taste it.
At the heart of everything we do is a love for the Lord, our family, our heritage, our animals, the land we’ve been entrusted to care for, and really good food.

Fresh Beef, Right Here in Parowan
Come see us at our retail meat shop on Parowan’s Historic Main Street, where our girls behind the counter are ready to help you find just the right cut.
Fresh beef begins arriving each Thursday and is available throughout the week—or until we sell out. Every week, we make one trip to deliver our cattle for harvest and another to bring home beef that has been properly dry-aged, professionally processed, and is ready for your table.
And because good meat emergencies don’t always happen Monday through Saturday, we’re now open seven days a week.
More Than Beef
Beef may be our specialty, but we know not everyone comes through the door looking for a ribeye.
We’re proud to also offer carefully selected products from other wonderful farms and ranches, including local lamb and mutton, premium pork, local honey, and more.
